Quinoa (Lat. Chenopodium quinoa) is South American plant, which fruits are very rich in nutrients. In South America quinoa has been a very important food source for more than 6000 years. Ancient Incas called quinoa the mother of all grains. Recently quinoa has started to be grow in mountainous areas of North America. Quinoa is not a grain at all, but in culinary quinoa is treated as such and can be black, dark brown, red, pink, yellowish or white color.

Usage
Rinse well before cooking. Ratio: 1 part quinoa to 2 parts water. Can be roasted before cooking. Boil for 15-20 minutes, until all liquid in the pot is absorbed. Then remove from a heat and let it stand for about 5 minutes. Cooked quinoa is pleasantly crispy.
Suitable for germination. Quinoa is an excellent alternative to rice, buckwheat, and potato side dishes.
Quinoa can be added to soups and stews. It is tasty both hot and cold. Hot porridge can be topped with various toppings such as nuts or fruits. As a cold dish quinoa can be mixed with beans, pumpkin seeds in a salad. Sprouted quinoa can become a topping for many more dishes. Pasta and flour can be made out of quinoa too.
